Chicken Fricassee with veggies

Fricassee is a traditional French stew made with pieces of chicken, rabbit, or veal meat that have been browned in butter and served in a sauce flavored with the cooking stock. This dish is made with a creamy white sauce, instead of the more common rich, dark brown sauce like you usually see with stews. Chicken appears to be very juicy and tender because of that white sauce. Another beauty of fricassee is that it’s cooked pretty fast and doesn’t require long hours of slow cooking.
Here we’ll try to also add some veggies like carrot, tomatoes, and bell pepper, although classical fricassee doesn’t include those at the same time fricassee has many variations limited only by what ingredients the cook has at hand.

- 2 chicken breasts
- 2 tomatoes
- 1 big onion
- 1 big carrot
- 1 bell pepper
- 200ml chicken stock
- 2 tbsp of extra-virgin olive oil
- 1 tbsp of butter
- cream
- 5-6 garlic gloves
- 2 tbsp of flour
- green onion
- salt
- black pepper
- smoked paprica

Steps
- Cut onion into a strips
- Melt a piece of butter in a frying pan, add extra-virgin olive oil, and start frying the chopped onion, stirring constantly.
- Chop the carrot. After onion is sauted to the translucent state, add chopped carrot into the pan and keep frying veggies together for another 5 minutes, keep stirring occasionally.
- Chop the chicken breasts, add it into the pan and stir alltogether.
- Saute chicken with veggies for 10 more minutes, then decrease the temperature and close pan with the lid.
- Chop bell pepper and add it to the frying pan.
- Remove skin from potatoes, chop them and also add to the frying pan together with bell pepper from the previous step.

- Wait for another 5-10 minutes till broth starts boiling. After that add cream and flour. Stir everything together very well as we need to completely dissolve flour in the sause withoug having any flour lumps accidentally left.
Broth, cream and flour actually makes a base for our creamy white sauce that makes chicken very tender! - Add spices after another 5 minutes of sauting.
- Mince geen onion and garlic cloves and add them into the frying pan. Spices and garlic should be added very close to the end of cooking. Stir all together again, close with the lid and keep sauting for another 5 minutes.
- Out fricassee is ready to be served!

Chicken Fricassee can be served directly in individual servings.
